Dear [contact-Company], We've all had the enjoyment of good meals. Good meals match well-made foods with sensibly-chosen wines. There are times, however, that call for another stratum where the food and wine are so well-prepared and the pairing so clever, they inspire that higher enjoyment; enjoyment that urges contemplation. We have solicited local chefs to share some recipes in harmony with the approach of Thanksgiving weekend. Special thanks to Sean Moore of Gamelle in Toronto, David Rennie from The Chef Upstairs in Toronto and Ryan Shapiro of About Thyme Bistro in Vineland for providing these simple and in some cases slightly off-the-beaten-track ideas, to match to your favourite Malivoire wines. If, on the other hand you're already planning a traditional ham or turkey Thanksgiving dinner prepared your own personal way, may we suggest either Ladybug Rosé or Gamay as ideal companions. For those of us at Malivoire, this season brings the satisfaction of reaping the rewards for the hard work invested over the past year in our vineyards. Harvest Update Picking up where we left off in our last newsletter, our 2007 harvest has begun. Visitors to the winery can expect to hear the rumble of the crusher, the hiss of the grape press and the voices of winemakers going hoarse from shouting over top of it all. Melon de Bourgogne, Chardonnay Musqué and Pinot Gris were the first varieties to come in from the vine. This week we hope to move through Chardonnay, Gamay and Marechal Foch. If all goes according to plan and dry weather allows us to pick uninterrupted, we should finish the harvest on or near Thanksgiving weekend, likely with Gewürztraminer. As we've already told you the 2007 yield will be low, perhaps two-thirds the size of last year's harvest. Especially limited will be our supplies of 2007 Chardonnay Musqué and Pinot Gris. Among the challenges we had to face this year was the stress caused to our vines as they tried to find scarce water while nourishing their fruit. In order to relieve the stress and save the vines from potential damage, we reluctantly pruned away a substantial share of the growing clusters, which further trimmed the already-low yield. This had the desired effect however, and our 2007 grapes are coming in with superb ripeness and robust sugars.
