Winemaker's Notes

Cool fermented slowly to dryness. Settled and racked, filtered and bottled as young as possible. In order to capture this wine’s extreme youthfulness, it was minimally processed and will likely throw harmless tartrate crystals (wine diamonds) when chilled.
