Winemaker's Notes
From the Mottiar Family Vineyard, a 3.2 hectare vineyard situated on the upper slopes of the Beamsville Bench on Quarry Road. Abandoned for more than a decade, winemaker Shiraz Mottiar purchased the farm in 2003 and planted 1 ha of Chardonnay, using four Dijon clones. At an elevation 30-45m higher than Malivoire’s estate vineyard, this wine promises distinct terroir, as soils sit on different layers of Niagara Escarpment limestone and sandstone bedrocks.
This 2007 Chardonnay is the first vintage ever produced. Hand harvested on September 13 at 21.3 brix, 5.7g/l titratable acid and 3.2 pH, grapes were whole cluster pressed, the juice settled, and drained to one second and one third fill French oak barrels. Spontaneous fermentation was encouraged with full malo-lactic fermentation. Barrels were lees stirred monthly for six months and left to age on lees for a further nine months. Bottled in June of 2009.
Food Pairings
Roasted chicken rubbed with fresh herbs and butter. Sauteed sea scallops or pan seared salmon fillet in parmesan crust.
