The nose abounds with aromas of plum, cherry, cedar and tobacco. The balanced interplay of fruitiness, acidity and minerality makes this wine pleasing to the palate. Lushly fruity, the flavour combines dark cherry and raspberry.

Winemaker's Notes
This 2008 Pinot Noir is the sophomore vintage from the Mottiar Vineyard. Hand harvested on September 27 at 21.9 brix, 8.3g/l titratable acid and 3.25 pH, grapes were destemmed to open-top oak fermenters, cold soaked for 3 days prior to fermentation with indigenous “wild” yeast. After a total of 21 days on the skins, the wine was pressed to barrel for malolactic fermentation and 14 months further ageing. Only 90 cases were bottled in January of 2010.Food Pairings
This Pinot Noir is a perfect match for a New York steak with wild mushrooms. The versatility of this wine also allows it to be paired with wild boar, barbecued salmon or roasted veal.Wine Reviews
Michael Pinkus - Ontario Wine ReviewThe Mottiar Vineyard is the personal 5-acre vineyard of winemaker Shiraz Mottiar and the vines are no more than 10 years old. The nose is ripe with sour cherry – at first you’ll have trouble picking it out but once the air begins to work its magic on the wine you’ll get it. Then the palate takes over with lots of red berry fruit: cherry and strawberry with a long cherry finish wrapped up in silky tannins – quite an elegant and supple Pinot. Price: $34.95 – Rating: ****
