Winemaker's Notes
This Chardonnay was sourced from our four estate vineyards Each individually hand harvested as each reached maturity. Average Brix was 21.0º, T/A measured 8.1g/L, and a pH of 3.35. The fruit was whole cluster pressed, cold settled, then racked off the heavy lees. 50% was fermented in French oak, while the rest was fermented in Stainless Steel, all completing Malo-Lactic fermentation. After 8 months of ageing, the two treatments were blended together. Final composition has 12.5% alcohol, and was bottled under Stelvin® August, 2009. Drink now until 2013.Wine Reviews
