Spinach Strawberry Salad
10.5 oz washed baby spinach leaves 300 g
3.5 oz fresh sliced strawberries 100 g
Dressing:
2 tbsp Rosemary Wine Syrup 30 ml
3 tbsp mayonnaise 45 ml
1/2 tbsp lemon juice 15 ml
freshly ground black and white pepper to taste

1.   Combine dressing ingredients in a jar and shake well.
2.   Pour dressing over spinach and strawberries, then toss.

Other suggestions:

- For a nuttier flavour use mesclun instead of spinach.
- For a creamier dressing add 30 ml of chèvre or a fresh sheep’s milk cheese like Liptoi.
- Toss toasted nuts (hazelnuts, pecans, almonds) into the salad.
