| 1. Combine dressing ingredients in a jar and shake well. |
| 2. Pour dressing over spinach and strawberries, then toss. |

Other suggestions:
- For a nuttier flavour use mesclun instead of spinach.
- For a creamier dressing add 30 ml of chèvre or a fresh sheep’s milk cheese like Liptoi.
- Toss toasted nuts (hazelnuts, pecans, almonds) into the salad.
