Tasting Notes from July 23, 2007:
Aromas have faded, showing more buttery, creamy notes. The palette has a lucious, silky mouthfeel punctuated by flavours of apricot, peach and tangerine with a great long finish. Drink now to 2008.
Winemaker's Notes:
All the fruit is from our Moira Vineyard where no chemical fertilizers, insecticides, herbicides or fungicides were used. The grapes were hand harvested on the 30th of September at 23.5° brix, 6.25 g/l acidity and 3.35 pH, then whole-cluster pressed to a maximum of 1.2 atmospheres yielding 45 hl/ha. The juice was cold-settled and racked. Seventy percent went to French tight-grained 300L oak barrels (20% new) for fermentation and ageing. Full malolactic fermentation. Weekly lees stirring for eight months. The barrel and stainless-steel portions were blended and received only coarse gravity filtration prior to bottling in July 2003.
Original Tasting Notes:
Elegant and complex, this wine opens with a leesy aroma of tropical fruit and lemon. The significant alcohol provides an "oiliness”" for a round, full mouth feel which is supported by the subtle richness of toasty vanilla. The tangy acidity leads to a dry, crisp, refreshing finish.
