The great 2007 vintage provided an over abundance of concentrated flavours and aromas to be extracted from the grapes once frozen. Garnet in colour, small berry aromas combine to evoke freshly baked bumble-berry pie. The bouquet also conjures aromas of blood orange and mint. The body is full with flavours of strawberry and sour cherry and finishes with crab apple tartness. A bold, quenching icewine that leaves you wanting more…and more….and more….
Winemaker's Notes:
The great 2007 vintage provided an over abundance of concentrated flavours and aromas to be extracted from the grapes once frozen. Sourced from the Epp Vineyard, these grapes were hand harvested by friends of Malivoire between -9° and -10°C in the late evening hours of January 2nd, 2008 and pressed well into the next morning. Pressed in vertical basket presses delivering juice at 38.1 ° brix. This juice was then fermented cool in stainless steel. The finished icewine has 11% alcohol and a residual sugar of 190 g/L.
Food Pairings:
This beautiful wine needs a simple food pairing. Enjoy this wine with a good blue cheese - e.g. Bleu d'Averne.
